Description
If you have about an hour to prepare dinner, you can make this wonderfully delicious Italian inspired chicken. The fresh mozzarella cheese, balsamic vinegar reduction and seasonings make it hard to resist. Serve with a nice salad and a favorite side dish.
Ingredients
- 3 large boneless, skinless chicken breast (about 1 1/2 lb.)
- 5 cloves garlic, sliced (minced will work)
- 1/4 c. olive oil
- 2 t. dried oregano
- 1 t. dried basil
- 4 oz. fresh mozzarella cheese, sliced
- 1 large tomato, thinly sliced
- 1/4 c. balsamic vinegar
- honey or brown sugar, optional for a bit of sweetness
- fresh basil
- salt and black pepper
Steps
- Preheat oven to 375 degrees.
- Place chicken on a cutting board; place a piece of parchment paper on top. Pound the breasts with a meat mallet until they are each about 1/2 inch thick.
- Season both sides of the chicken with oregano, basil and liberally with salt and pepper.
