Baked Caprese Chicken

Description

If you have about an hour to prepare dinner, you can make this wonderfully delicious Italian inspired chicken. The fresh mozzarella cheese, balsamic vinegar reduction and seasonings make it hard to resist. Serve with a nice salad and a favorite side dish.

Ingredients

3 large boneless, skinless chicken breast (about 1 1/2 lb.)
5 cloves garlic, sliced (minced will work)
1/4 c. olive oil
2 t. dried oregano
1 t. dried basil
4 oz. fresh mozzarella cheese, sliced
1 large tomato, thinly sliced
1/4 c. balsamic vinegar
honey or brown sugar, optional for a bit of sweetness
fresh basil
salt and black pepper

Preheat oven to 375 degrees.

Place chicken on a cutting board; place a piece of parchment paper on top. Pound the breasts with a meat mallet until they are each about 1/2 inch thick.

Season both sides of the chicken with oregano, basil and liberally with salt and pepper.

Heat olive oil in an oven-safe skillet over medium heat. Once hot, add garlic; saute until it's just fragrant; add chicken breasts to the skillet. Sear chicken for about 3 minutes per side until each side is browned. Place 2 slices of mozzarella on each chicken breast; place skillet in the oven. Bake about 20-25 minutes or until chicken's internal temperature is 165 degrees.

While chicken is cooking, heat balsamic vinegar in a small saucepan over medium-low heat, stirring occasionally; and continue gently heating until vinegar reaches the desired thickness. If wanting it to be a bit more sweet, add a small amount of honey or brown sugar while it’s reducing.

Serve with 2 tomato slices placed on top of each chicken breast, then drizzle balsamic reduction on top. Garnish with more oregano and basil.
