Dinner doesn't need to be complicated and time consuming. Using rotisserie or left over chicken makes this dish so much quicker to put together. It's yummy, creamy and so full of flavor.
14.5 oz. package Nacho Cheese Doritos, lightly crushed, divided
2 ½ - 3 c. shredded rotisserie chicken, cut into small pieces
1 can black beans, drained and rinsed
15.25 oz. can corn, drained
8 oz. Colby-Jack cheese, shredded and divided
10 oz. mild Ro-tel diced tomatoes and green chiles
4 oz. can green chilies
10.75 oz. can condensed cream of chicken soup
8 oz. sour cream
1 T. taco seasoning
cilantro and or guacamole, if desired
Preheat oven to 375 degrees. Lightly spray a 9 x 13 inch baking dish with non-stick cooking spray.
Spread half of the crushed Doritos into the bottom of the prepared baking dish.
In a large bowl, stir together chicken, black beans, corn, 1 c. cheese, Ro-tel, green chiles, soup, sour cream and the taco seasoning; spread mixture evenly over the Doritos in the baking dish.
Bake 30 minutes. Evenly spread remaining Doritos over the top; sprinkle with the remaining cheese. Bake 5 - 7 minutes or until cheese is melted.
Serve, garnished with cilantro, and or guacamole, if desired.
