This is not your classic omelet. It's eggs prepared with apples, cinnamon, vanilla, brown sugar, cream and sour cream and then served with maple syrup.
2 T. butter, divided
1 Granny Smith apple, peeled and thinly sliced
1/2 t. ground cinnamon
3 eggs
1 T. brown sugar
1/2 t. vanilla extract
2 T. cream or milk
1 T. sour cream
maple syrup, for serving
Heat 1 T. butter in a non-stick skillet over medium-high heat; add apples and cinnamon; cook until tender; remove from skillet.
In a bowl, whisk together eggs, brown sugar, vanilla and cream/milk.
Heat remaining butter in skillet until melted; add egg mixture; let cook. When the eggs are almost cooked through, add in apple mixture and sour cream.
Fold and serve with maple syrup.
