Making this dish is so easy and quick. It's wonderful for your meatless Monday dinner or great as a side dish as well.
1 lb. angel hair pasta
1/2 c. unsalted butter
2 garlic cloves, peeled and halved
1/2 c. freshly grated Parmesan cheese
freshly minced parsley or chives, for serving
Cook pasta in well salted water according to package directions, about 2-6 minutes; drain; set aside, keeping it warm.
Meanwhile, melt butter in a small saucepan over medium heat; add halved garlic cloves; cook over medium heat until butter foams, giving the pan a good occasional swirl. Once butter foams, keep a close eye on it so that it doesn't burn. The color will change from yellow to tan and then to brown. Once it reaches brown, immediately remove it from the heat; pour over the cooked pasta; discard the garlic cloves. Stir in Parmesan cheese until melted.
Serve hot with some minced parsley or chives.
*Change up the flavor by garnishing with a little tarragon. Or, change the Parmesan cheese to Mizithra cheese.
