Put your slow cooker to work making this easy to prepare, flavorful, delicious meal. It's pretty much just throw things in the slow cooker and go about your day.
Ingredients
- Mojo Pork:
- 3-4 lb. boneless pork butt (shoulder), trimmed of excess fat, cut into big chunks
- 3/4 c. chicken broth
- 1/2 c. orange juice
- 1/4 c. lime juice
- 1/4 c. lemon juice
- 1 onion, cut into big chunks
- 1 jalapeno, sliced in half
- 1 head garlic, cloves separated and peeled
- 1-1/2 t. salt
- 1 t. dried oregano
- 1/2 t. pepper
- 1/2 t. cumin
- 1/2 t. smoked paprika
- 2 bay leaves
- Cuban-Style Black Beans:
- 1 T. extra virgin olive oil
- 1/2 onion, chopped
- 1/2 green bell pepper, chopped
- 2 cloves garlic, minced
- salt and pepper
- 1/2 t. dried oregano
- 15 o.z can black beans, drained and rinsed
- 1/4 c. chicken broth
- 1 t. red wine vinegar
- guacamole for serving, if desired
Steps
- Pork:
- Add all pork ingredients to a large slow cooker; stir; cook on Low for 8-10 hours or until pork shreds easily with a fork.
