Matterhorn Chicken with Parslied Egg Noodles

Description

In less than an hour, you can have this yummy chicken dish on your table. Serve it with hot parslied egg noodles and a side salad for a complete meal.

Ingredients

4 chicken breasts split, boned, skinned
salt
4 t. chopped green onion
2 c. (8 oz.) shredded Swiss cheese
2 eggs, beaten
3/4 c. dry bread crumbs
oil, for browning

hot parslied egg noodles, for serving

Preheat oven to 400 degrees.

Flatten chicken to 1/4 inch thickness.

Sprinkle each breast with salt; top each with 1/2 t. green onion and 3/4 c. Swiss cheese. Fold chicken over cheese. Secure with wooden toothpicks.

In a shallow bowl, dip chicken pieces in beaten eggs; coat with bread crumbs. Place in a skillet; brown in oil. Place browned chicken in a baking dish.

Bake for 20 minutes.

Serve over hot parslied noodles.
