Quick Southwest Chicken Soup

Description

No time to cook? No problem. You can make a hearty, healthy, delicious meal in about 10 minutes using canned soups, chicken broth, cooked chicken and seasonings. So quick and good, you will not be tempted to order that take out meal.

Ingredients

14 oz. can corn, drained, (about 1 1/2 c.)
14 oz. can black beans, drained and rinsed, (about 1 1/2 c.)
2 - 10 oz. cans tomatoes with green chiles, (or a mild version for almost no heat)
28-32 oz. chicken broth, (about 4 c.)
1 t. granulated garlic or garlic powder
1/2 t. cumin
1/2 t. kosher salt, or to taste
1/4 t. freshly ground black pepper
1/8 t. cayenne pepper
2 c. cooked chicken, chopped 3/4 inch bite-size pieces
squeeze of fresh lime juice

choice of optional toppings: shredded cheeses-Cheddar cheese, Monterey Jack, Pepper Jack, or Mexican cheese blend; tortilla strips; avocado slices; sour cream; freshly chopped cilantro; guacamole

Combine corn, beans, tomatoes, broth, garlic powder, cumin, salt, pepper, and cayenne in a pot. Bring to a boil; reduce to medium-high heat; add chicken; stir to combine. Simmer for 2-3 minutes, until chicken is warm and soup is steaming.

Serve with toppings of choice.
