Ingredients
3-4 lb. beef chuck pot roast*
2 oz. pkg. Good Seasons Zesty Italian salad dressing mix (or homemade seasoning)
12 oz. can beer (or non-alcoholic beer)
1-2 cans beef broth, beef stock or consommé
1 jar pepperoncini peppers with juices
6-8 slices Provolone cheese
butter
garlic salt
6-8 sandwich buns or hoagie rolls, split and toasted

Place roast in a 4 quart slow cooker. Sprinkle in salad dressing mix; pour beer and beef broth over the top. Add pepperoncini peppers with its juices. Cook on low 12-14 hours or on high for 5-6 hours,. Shred meat with 2 forks.
When the roast is almost done, preheat the oven to 350 degrees; brush buns with butter; sprinkle with garlic salt. Toast in oven for 10-12 minutes until lightly brown.
For serving, place slices of Provolone cheese on still hot buns; place shredded meat on bottoms of buns. Dip sandwiches into individual ramekins with meat juices, if desired.
*For even more flavor, brown the beef before placing it in the slow cooker.
