Mushroom, Pepper and Sausage Ziti with 5 Minute Marinara Sauce

Description
Everyone loves a good Italian pasta dish and they will certainly love this one. Serve it with a salad, crusty Italian bread or garlic bread and perhaps a little red wine.
Ingredients
8 oz. ziti or small shaped pasta
1 lb. spicy Italian sausage
16-20 oz. baby bella or crimini mushrooms, quartered
1 large yellow and 1 large red bell peppers, chopped into 1/2 inch pieces
1 small sweet yellow onion, chopped into 1/2 inch pieces
2 T. butter
1 t. kosher salt, divided
1/2 t. granulated garlic
1 qt. Five Minute Marinara Sauce (recipe below)
finely shredded Parmesan or Pecorino Romano cheese, for serving
Five Minute Marinara Sauce:
1/4 c. extra virgin olive oil
3/4 - 1 1/2 t. crushed red pepper flakes (1 1/2 t. makes a very spicy sauce)
1/2 t. fine grain sea salt
3 medium cloves garlic, minced
28 oz. can crushed red tomatoes (not diced, not pureed, not whole, no additional seasonings)
1 t. zest from 1 lemon

Cook ziti according to package directions, about 8-9 minutes. Drain; rinse with cold water to stop it from cooking while it cools; set aside.
While ziti is cooking, melt butter in a large skillet/dutch oven over medium heat. Add onion; cook, stirring occasionally, for several minutes, until it begins to soften. Add bell peppers and mushrooms. Season with 1/2 t. salt. Saute until peppers soften and mushrooms are browned and tender. Drain any liquid from pan. Season with garlic and the remaining salt. Saute for 1 more minute; transfer to a bowl.
Add sausage to the pan; cook; crumble met over medium heat; discard grease. Add cooked vegetables to the pan with the meat; stir to combine, making sure everything is hot. Pour marinara sauce into the pan; stir to coat. Add cooked pasta; stir to combine.
Serve immediately, with cheese sprinkled on each serving.
6-8 servings.
Five Minute Marinara Sauce:
Combine olive oil, red pepper flakes, salt and garlic in a cold saucepan; stir while heating the pan over medium-high heat. Saute for 45 seconds to 1 minute, just until everything is fragrant. Avoid letting the garlic turn brown. Stir in tomatoes; heat to a gentle simmer, which will take a couple of minutes.
Remove from heat.Season with salt, if necessary. Stir in lemon zest.
