Celebrate Christmas morning with these festive Santa pancakes. They are so yummy and fun to make, you will make them a holiday tradition.
2 c. biscuit/baking mix
1 t. ground cinnamon
2 large eggs, lightly beaten
1 c. whole milk
1 t. vanilla extract
2 medium bananas, sliced
18 semi-sweet chocolate chips
21 oz. can cherry pie filling
canned whipped cream
In a large bowl, combine baking mix and cinnamon.
In a small bowl, whisk together eggs, milk and vanilla. Stir this mixture into the dry ingredients just until moistened.
Pour batter by 1/4 cupfuls onto a greased hot griddle. Flip over when bubbles form on top; cook until second side is golden brown.
Place 1 pancake on a plate for Santa's face.
For Santa's eyes, place 2 banana slices; top each with a chocolate chip.
For Santa's ears, cut a banana slice in half; place on either side of the pancake.
For his nose, remove a cherry from the pie filling and place it in the center of the pancake.
Spoon and arrange 1/4 c. pie filling above the pancake for the hat. Use whipped cream to spray on for the beard, hat brim and pom-pom.
Repeat 8 times.
