Enjoy a new take on the classic chicken salad using smoked chicken and some grapes. It's great on croissants, buns, Ciabatta or any kind of bread or even in a lettuce wrap.
2 c. smoked chicken, cubed (leftover or store-bought is great)
1 c. grapes, halved
1/4 c. celery, finely diced
1/4 c. red onion, finely diced
1/2 c. mayonnaise
salt and pepper
6 croissants, buns or Ciabatta bread
6 lettuce or Arugula leaves
optional chopped fresh chives, for garnish
Place smoked chicken, grapes, celery, onion and mayonnaise in a large bowl; season to taste; stir to combine.
Split croissants or buns; add lettuce or arugula to each sandwich. Spoon 1/6 of chicken salad on top. Scatter on chives, if desired.
6 sandwiches.
