Do you want to build a snowman? Stay warm and build some inside for a fun breakfast with snowman pancakes.
1 c. pancake and waffle mix
1 large egg
3/4 c. whole milk
1 T. melted butter
cooked bacon strips (not too crisp, you want it foldable)
strawberries
blueberries
chocolate syrup
powdered sugar
Preheat a griddle to 350 degrees.
Beat the egg and milk together; add pancake mix; stir well; stir in melted butter; mix thoroughly.
Ladle mixture onto the preheated griddle. For a 1 snowman serving, make 3 circular pancakes, slightly different in sizes. Flip over when air bubbles begin to form and pop and the bottom is golden-brown.
Transfer pancakes to a large plate when both sides are golden brown, arranging the pancakes with the largest at the bottom and the smallest at the top.
Fold a strip of bacon under the top pancake to represent the scarf. Make eyes and buttons with blueberries, the nose with a slice of strawberry and the mouth with a line of chocolate syrup.
Repeat using the remaining pancake mix.
Serve, dusted with powdered sugar to represent snow.
Tip: Use a strawberry sliced in half from top to bottom for the hat with some whipped cream for trim.
