Hungry for lasagna but don't have the time or energy to make the classic recipe? Make this easy, quick dish that's already yummy as written your own with garlic and your favorite seasonings, if you wish. Serve it with a side salad and garlic bread.
1 T. olive oil
1 lb. mild Italian sausage, casings removed (or favorite Italian sausage)
16 oz. favorite store bought or homemade marinara sauce
3 1/2 c. water
12 oz. mafaldine corte, farfalle pasta or lasagna pasta, broken into thirds
8 oz. mini mozzarella balls
3/4 c. ricotta cheese
1/4 c. grated Parmesan cheese
torn fresh basil leaves, for serving
Heat olive oil in a Dutch oven or large, wide pot over medium-high heat; add sausage; cook, breaking up clumps, until brown, about 6 minutes. Add marinara and water; bring to a boil. Add pasta; partially cover so that the sauce doesn't splatter; cook, stirring occasionally, until pasta is al dente, about 16 minutes. Stir in mozzarella and ricotta cheeses.
Serve with grated Parmesan cheese and fresh basil.
