Vegetarian dishes don't need to be blah and boring. This one certainly isn't. Add your favorite sausage if you prefer a meat version.
1 prepared deep dish 9 inch single pie crust
4 eggs, beaten
¾ c. milk
1 T. chopped fresh parsley
1 t. minced or chopped garlic
½ t. salt
½ t. freshly ground black pepper
⅛ t. ground nutmeg
5 oz. fresh spinach
8 oz. sliced fresh mushrooms
½ yellow or white onion, sliced
4 oz. crumbled feta cheese
4 oz. shredded Swiss cheese, divided
Preheat oven to 400 degrees.
Place pie crust into a 9 inch pie dish; place on a baking sheet.
Saute the mushrooms, garlic and onions; wilt the spinach; drain well.
Gently combine spinach, mushrooms, onion and feta cheese in a bowl; spread mixture in the pie dish; top with half of the Swiss cheese.
Whisk eggs, milk, parsley, garlic, salt, pepper and nutmeg in another bowl; pour evenly over the filling, swirling egg mixture in bowl to spread seasonings throughout the eggs; top quiche with remaining Swiss cheese.
Bake until quiche is lightly puffed and browned, 45-50 minutes, or until a wooden toothpick inserted into the center of the filling comes out clean.
Cool for 30 minutes before serving.
