Use your slow cooker to make a great, delicious, comforting and satisfying meal on a cold winter day.
2 lb. boneless, skinless chicken breasts, trimmed
1 onion, diced
1 c. sliced carrots
1 c. sliced celery
1 T. freshly grated ginger
1 T. minced garlic
8 c. low-sodium chicken broth
1 t. dried thyme
1 t. dried oregano
12 oz. egg noodles
salt and pepper, to taste
3 T. freshly chopped parsley
Place chicken in a 6-8 quart slow cooker. Add onion, carrots, celery, ginger and garlic; add chicken broth; stir in thyme and oregano.
Cover; cook on Low for 6-8 hours, or on High for 3-4 hours.
Transfer chicken to a cutting board; shred chicken with a fork; add chicken back into the slow cooker.
Stir in noodles; cover. Cook on High for 12-15 minutes until noodles are soft and cooked through.
Season with salt and pepper, to taste. Stir in parsley.
Serve hot.
