Description

This is a fun, delicious twist on a classic pizza dish. It becomes almost a deep dish pizza. The recipe can easily be adapted according to desired tastes.

Ingredients

2 T. olive oil, divided
1 onion, thinly sliced
1 green bell pepper, seeded and thinly sliced into rings
non-stick cooking spray
½ c. pepperoni, sliced
¾ c. grated Parmesan cheese
¾ c. shredded Mozzarella cheese
7 slices Provolone cheese
1-2 c. pizza sauce
all-purpose flour, for dusting
1 lb. store bought pizza dough

Preheat oven to 400 degrees.

Heat 1 T. olive oil in a 12-inch cast-iron skillet over medium-high heat; once hot, add onion; cook until softened, about 4 minutes; remove from skillet; set aside. Add green pepper rings; cook until softened, about 5 minutes; remove from skillet; set aside. Turn off heat.

Spray skillet with non-stick spray.

Arrange pepperoni in an even layer on the bottom of the skillet; top with green peppers, onions, Parmesan and Mozzarella cheeses; evenly arrange the Provolone cheese slices over the shredded cheeses. Evenly spread dollops of pizza sauce on top. Be sure not to use too much or pizza will become soggy.

On a lightly floured surface, roll out the pizza dough to a 12-inch round. Gently lay pizza dough over the pizza sauce, making sure the dough reaches to all edges. Brush the dough with the remaining olive oil.

Bake 25 minutes, until dough is golden brown.

Remove skillet from the oven. Place a large baking sheet on top; quickly invert pizza onto the baking sheet. Return pizza to the oven; bake 20 minutes, or until pepperoni begins to crisp.

Serve.
