You won't miss the meat or the red sauce in this delicious pizza. It's full of fresh vegetables and makes a great, easy to prepare, meatless meal.
1 lb. store bought pizza dough, (or homemade)
2 1/2 T. extra virgin olive oil, divided
3 garlic cloves, minced
1/2 t. dried oregano
1/4 t. dried basil
1/8 t. dried thyme
salt and freshly ground black pepper
6 oz. fresh mozzarella cheese, chopped into pieces (low moisture mozzarella would be fine)
4 oz. feta cheese, crumbled
1/2 c. chopped or sliced favorite bell pepper, optional
1 c. diced grape or cherry tomatoes, halved
1/3 c. chopped Kalamata olives
1/4 c. chopped red onion
1 T. chopped fresh parsley
Preheat oven to 450 degrees. Place a pizza stone in the oven to heat for 30 minutes.
Meanwhile, combine 1 1/2 T. olive oil and garlic in a small bowl.
Spread and shape pizza crust into a 12 to 13 inch round over a sheet of lightly floured parchment paper. Create a rim along the edge of the dough. Brush pizza dough evenly with olive oil mixture.
Evenly sprinkle with oregano, basil, thyme (leave the rim uncovered with herbs). Lightly season with salt and pepper. Evenly top with mozzarella and feta cheeses.
Bake 12-15 minutes or until crust is golden.
Meanwhile, saute bell peppers in a skillet in 1 T. olive oil over medium-high heat until tender. (They could also be added without sauteing, if preferred).
Remove pizza from oven.
Serve immediately topped with bell peppers, tomatoes, olives, onion and parsley.
