Easy Pasta and Broccoli

Description

This is a super easy, delicious and economical meal to serve to your family on those busy weeknights. It can be on the table in about 15 minutes. It could also be served a side dish.

Ingredients

  • 12 oz. uncooked pasta (macaroni, shells, orecchiette pasta)
  • 6 1/2 c. fresh broccoli florets, no stems
  • 5 cloves garlic, minced
  • 1/4 c. freshly grated Parmesan or Romano cheese (use a good quality cheese)
  • 2 T. olive oil, divided
  • kosher salt
  • freshly ground black pepper

Steps

  1. Bring a large pot of well salted water to a boil; add pasta and broccoli together: cook al dente according to pasta directions.
  2. When pasta is almost done, reserve/set aside about 1 c. pasta water; drain; set broccoli and pasta aside.
  3. Return pot to the stovetop; set heat to high; add 1 T. olive oil; when hot, add garlic; cook until golden; reduce heat to low; add pasta back to the pot. Stir well; add remaining olive oil, cheese, salt and pepper; stir well. Add 1/2 c. reserved pasta water; stir, add more water if needed.
