Ingredients

1 lb. lean ground beef
1 packet favorite taco seasoning
2 c. water
2 c. Minute Rice, uncooked
1 c. salsa (or mild taco sauce)
1 c. shredded Cheddar cheese
Topping choices: tomatoes, iceberg lettuce, sour cream, guacamole, avocado, additional Cheddar cheese, corn or tortilla chips

In a large skillet, crumble and brown ground beef; discard excess grease.

Add in taco seasoning and water; stir; cook and allow to come to a boil. Turn heat down; add uncooked rice; stir; cover; cook for about 5 minutes or until rice is tender.

Uncover; stir in salsa and cheese; remove from heat.

Serve with diced tomatoes, shredded lettuce, sour cream, guacamole, avocado slices, additional cheese, or chips of choice. It could also be served in a hard of soft taco shell, if desired.
