Enjoy a tasty, simple to make Caribbean dish in your crock pot. It's an inexpensive dish but full of wonderful flavors.
2 lb. skinless, boneless chicken thighs, fat trimmed
1 small onion, diced
1 clove garlic, crushed
1 bell pepper, chopped or sliced
4 plum tomatoes
salt
1/4 t. cumin
1/4 t. oregano
8 oz. can tomato sauce
2 T. capers (or pitted, whole Spanish olives), reserving 1 T. brine
1/2 c. water
1 bay leaf
1/4 c. fresh cilantro, chopped, plus 2 T. for serving
cooked rice, for serving
Place chicken, onion, garlic, bell pepper and plum tomatoes in the crock pot. Season with salt, cumin and oregano; stir.
Add tomato sauce, capers (or olives) along with 1 T. brine from capers/olives, 1/2 c. water, bay leaf and cilantro; stir well.
Set crock pot on HIGH for 4 hours or on LOW for 6 hours.
When done, add salt, if needed. Season and adjust spices to taste, as needed.
Serve over cooked rice with 2 T. chopped fresh cilantro on top.
