Enjoy your pasta, vegetables and protein all in one dish. It's really very easy and so delicious.
12 oz. fresh brussels sprouts
2 c. tortellini, uncooked
10 strips bacon, cooked, chopped, divided
1 c. heavy cream
1/4 t. salt
1/2 c. shredded Parmesan cheese
1/2 c. milk
Bring a large pot of well salted water to a boil.
Cut off the stems of brussels sprouts; cut each sprout in half. Add sprouts to boiling water; boil for 5 minutes. Remove using a large slotted spoon; set aside. Do not discard the water.
In the same pot of boiling water, cook tortellini according to the package instructions; drain.
Add brussels sprouts, heavy cream, the salt and half of the bacon to a large skillet; bring to boil. While constantly stirring, add the cheese into boiling heavy cream; stir until the cheese starts to melt, coating the brussels sprouts and bacon. Reduce heat to simmer; continually stir to make sure that the cheese does not stick to the bottom of the skillet. Gradually add milk to thin out the sauce, stirring it in.
Add cooked tortellini and the remaining bacon to the skillet with the cream sauce, on low heat. Stir well, season to taste with salt, if needed.
