What to make for those meatless meals? Look no further, this one is it. It's a vegetarian dish that anyone can enjoy, but sausage can be added, if desired.
1 prepared 9-inch single deep dish pie crust
4 eggs
3/4 c. milk
1 T. chopped fresh parsley
1 t. minced garlic
1/2 t. salt
1/2 t. ground black pepper
1/8 t. ground nutmeg
5 oz. fresh spinach, blanched
8 oz. sliced fresh mushrooms, (saute, if desired)
1/2 yellow onion, sliced (saute, if desired)
2 oz. crumbled feta cheese
4 oz. shredded Swiss cheese, divided
Preheat oven to 400 degrees.
Place pie crust in a 9-inch deep dish pie plate; place on a baking sheet.
In a bowl, whisk eggs, milk, parsley, garlic, salt, pepper and nutmeg.
In another bowl, gently combine spinach, mushrooms, onion, and feta cheese. Spread mixture in prepared pie dish; top with half of the Swiss cheese.
Pour egg mixture evenly over the filling, swirling it in the bowl to spread seasonings throughout the eggs; top with remaining Swiss cheese.
Bake until quiche is lightly puffed and browned, 45 - 50 minutes and a wooden toothpick inserted in the center comes out clean. Cool for 30 minutes.
Serve.
