Pizza for breakfast is always a good thing. This one is loaded with everything everyone loves, cheese, sausage or bacon, veggies, onion and wait for it...a runny egg.
1 piece garlic naan bread
2/3 c. mozzarella or sharp white cheddar cheese
1 T. olive oil
1/4 c. diced red onion
1/3 c. cooked breakfast sausage (or bacon)*
1 egg
fresh basil and red pepper flakes, for garnish
1/2 jalapeno, sliced, optional
salt and pepper
Preheat oven to 475 degrees.
Cook breakfast sausage in a skillet until done; cut/crumble into small pieces.
Meanwhile, dice the red onion and jalapeno; set aside.
Place naan bread on a baking sheet; drizzle olive oil on top; spread 1/3 c. cheese over the top. Add sausage, onion and jalapeno. Leave a small circle in the middle of the crust for the egg. Crack the egg in the middle of the naan. Sprinkle on remaining cheese, making sure not to cover the egg. Season with salt and pepper on top of the egg.
Bake for 8-10 minutes or until whites of egg have cooked through. Garnish with crushed red pepper flakes and fresh basil if desired. Enjoy immediately!
1 serving.
Tip: Even if the sausage is fully cooked, saute it for a few minutes in a pan prior to putting it on the pizza for further caramelization.
