Avocado lovers or not, you and your family will go crazy over this creamy chicken salad. It will be such a hit, you'll give it a 5 star rating.
1 1/2 c. cooked chicken, chopped into small pieces*
1 large avocado, seeded, peeled and cut into 1/2 inch pieces
1/3 c. mayonnaise
1/4 c. finely chopped celery
1/4 c. finely chopped red onion or green onion
1/8 t. salt, or to taste
1/8 t. freshly ground black pepper
1 t. freshly squeezed lime juice from 1 lime
1/2 T. fresh cilantro or parsley
Combine chicken, celery, onion and avocado in a medium bowl.
Dressing:
In a small bowl, stir together mayonnaise, salt, pepper and lime juice.
Add dressing to the chicken; stir to coat.
Serve topped with fresh parsley or cilantro on sandwich bread, on toast, on lettuce, or on crackers.
Store in an airtight container with plastic wrap touching the top of the salad; refrigerate immediately. It will keep in the refrigerator a few days.
2-3 servings.
*Rotisserie chicken, leftover chicken or canned chicken can be used.
