With just a little effort and time, you can have a quick but still tasty meal. It's a flavorful pizza with a crispy crust that you'll make many times in the future.
1 loaf French bread (or Italian bread)
2 T. olive oil
1 t. Italian seasoning
1/4 t. kosher salt
12-16 oz. Mozzarella cheese
1 1/2 c. pasta sauce
1/4 c. freshly grated Parmesan or Pecorino Romano
2 T. fresh Italian parsley, chopped small
Preheat oven to 400 degrees.
Slice bread in half lengthwise; cut each half into 3 pieces. If the bread is thicker than about 1 inch, press down on each piece until it’s closer to 1 inch thickness. Place pieces on a large baking sheet.
In a small bowl, combine olive oil, Italian seasonings and salt. Brush the sliced portions of each piece with the olive oil mixture; top bread with half of the cheese. Bake in the oven for 8-10 minutes until cheese melts.
While the cheese on the bread is melting, warm pasta sauce in the microwave or on the stovetop. Remove bread from the oven; spread the sauce evenly over the bread.
Top bread with remaining cheese; return to the oven until the cheese has melted and the sauce is bubbling, about 5-6 minutes. Remove from the oven.
Serve sprinkled with Parmesan cheese and parsley.
