This is a must try recipe. It's super easy and tasty, your family will give it a two thumbs up.
3 lb. boneless pork shoulder
1/2 t. ground cumin
3 cloves garlic, finely chopped
1 1/2 t. Kosher salt
1/4 t. freshly ground black pepper
3 T. freshly squeezed orange juice
1 T. freshly squeezed lime juice
Four 6 inch soft sub loaves or hoagie buns, split
3 T. mayonnaise
3 T. yellow mustard
4 oz. thinly sliced ham
6 oz. sliced Swiss cheese
1 c. dill pickle chips
2 T. unsalted butter, divided
Rub pork all over with cumin, garlic, 1 1/2 t. salt and 1/4 t. pepper.
Place pork in a slow cooker; drizzle with orange and lime juices. Cook on high heat until meat is tender and falling apart, about 6 hours.Transfer to a cutting board; shred coarsely.
Spread one side of each sub loaf with mayonnaise and the opposite side with mustard. Build sandwiches with the pulled pork, ham, Swiss cheese and pickles.
Melt 1 T. butter in a large skillet over medium heat. Place 2 sandwiches in the skillet; cover with another skillet; weigh it down with a heavy can or pot. Cook until golden brown, about 4 minutes; flip sandwiches over, replace the top skillet; continue to cook until the second side is golden brown and cheese is melted, about 3 minutes. Repeat with remaining sandwiches, adding remaining butter to the skillet.
