This is a great dish to serve as an appetizer, side dish or even a main dish. It has a sauce that delicious and mild tasting which could even be great on other dishes. It's so easy and quick to prepare, you'll make it often.
1 lb. frozen tater tots
1/4 c. half and half
1 1/4 c. shredded Mexican cheese blend, divided
1 1/2 t. cornstarch
3 T. pico de gallo or chopped tomatoes
2 T. fresh cilantro leaves
sour cream, for serving
Bake tots according to the package directions, until very crispy, about 15-20 minutes.
Meanwhile, combine half and half, 1 c. cheese and cornstarch in a small saucepan. Whisking constantly, cook over medium heat until melted and smooth, 3 - 4 minutes; stir in pico de gallo.
Preheat broiler to high.
When tots are done, transfer to an 8 inch cast-iron skillet. Spoon cheese sauce over the tots; sprinkle with remaining 1/4 c. cheese.
Broil until cheese is bubbling and melted, about 1 minute.
Serve, topped with cilantro and sour cream.
