This dinner is so easy to make, you can't mess it up. Just place all of the ingredients in the crockpot and cook. It's great to do in the morning and then come home to a delicious, satisfying complete meal.
2 lb. fresh green beans, ends discarded, cut into pieces
2 lb. ham, diced
4 baking potatoes, washed and diced
1 medium onion, peeled and diced
3 c. water
Place all ingredients in the crockpot; add 3 c. water; season with pepper. DO NOT add salt until ready to serve since potatoes absorb salt. You might add way too much.
Cook on Low for about 6 hours.
8 servings.
Tips:
*If the ham doesn't have much flavor, use chicken broth in place of the water and add a bay leaf, but remove it before serving.
If crispy green beans are preferred, add them during the last hour of cooking.
