Taco Tuesday needs a side dish to serve with your favorite tacos and this one won't disappoint. It's easy and so delicious, it is definitely a keeper.
1 t. canola oil
1 c. long grain white rice
1 c. chicken stock
2 - 3 lime peel strips
1/2 t. kosher salt
1 1/2 c. water
1 T. lime zest plus 2 T. freshly squeezed lime juice, or a little less, to taste
lime slices, for garnish
1/4 c. chopped fresh cilantro leaves, plus more for garnish
2 green onions, green parts only, chopped
Heat canola oil in a large saucepan over medium-high heat. Add rice; toast until lightly golden, about 1 minute. Add stock, lime peel, salt and 1 1/2 c. water; bring to a boil; cover; reduce heat to low; simmer until all of the liquid is absorbed, about 15 minutes.
Let rice stand, covered, about 5 minutes; stir in lime zest, lime juice and cilantro.
Serve, garnished with cilantro, green onion and a slice of lime.
