This side dish is even better than most restaurants serve and is hands down better than any packaged version. It's so flavorful and is the perfect consistency and is so good, you might want to double the recipe for leftovers.
3 T. vegetable oil
1 c. long-grain rice, uncooked
1 t. minced garlic
1/2 t. kosher salt
1/2 t. cumin
1/2 c. tomato sauce
14 oz. chicken or vegetable broth
3 T. fresh chopped cilantro finely, optional
Heat oil in a large saucepan over medium heat. Add rice; gently stir until rice begins to lightly brown; add garlic, salt and cumin; stir rice until golden.
Add tomato sauce and broth; turn heat to medium-high; bring to a boil; turn heat to low; cover; simmer 20 - 25 minutes.
Remove from heat; fluff with a fork. Stir in chopped cilantro, if using.
