This one pot main dish saves time and clean up on the busy weeknights. It goes from the stovetop to your table in less than 30 minutes. But best of all it's delicious.
1 T. olive oil
3-4 cloves garlic, minced
1 lb. sliced mushrooms (double, if you love mushrooms)
1/2 - 1 t. Italian seasoning, or to taste
¼ t. salt
5 c. vegetable broth (or milk for extra creaminess)
1 lb. spaghetti, uncooked
2-3 T. butter
3-6 oz. cream cheese
3 oz. finely grated Parmesan cheese
Heat a large skillet over medium-high heat; add olive oil; cook garlic and mushrooms until soft, about 4 minutes. Add herbs, salt, broth and spaghetti; bring to a boil; simmer for 10 minutes or until pasta is done.
Stir in butter, cream cheese and cheese.
Serve immediately.
