Why eat a chicken sandwich when you could have a chicken wrap instead? This delicious meal has shredded chicken, celery, pecans and cranberries all wrapped up in a tortilla or maybe even lettuce leaves, if desired.
3 c. cooked, shredded chicken*
1/2 c. dried, sweetened cranberries
4 large tortillas or wraps**
1/2 c. chopped pecans
1/4 c. chopped celery
1/2 c. mayonnaise, or more or less to taste
1 t. parsley, fresh
salt, to taste
white pepper
Add chicken, cranberries, pecans and celery to a large bowl; stir. Add mayonnaise, salt and white pepper; stir.
Lay tortilla on a flat surface like a plate or cutting board. Add a spoonful of chicken mixture on the tortilla; sprinkle on a bit of fresh parsley. Roll up sides and ends into a wrap.
Cut into slices.
Serve.

Tips:
*Rotisserie chicken would be great to use.
