Who would have thought that peanut butter on a burger would be good? It shouldn't be but it is so delicious and easy to make!
2 lb. ground chuck beef 80% lean / 20% fat
4 t. salt
1 t. pepper
4 slices pepper jack cheese or favorite cheese
peanut butter, creamy or chunky
mayonnaise
8 bacon slices
4 hamburger buns
Cook bacon in a skillet or in the oven for 15-20 minutes at 400 degrees; set aside.
Preheat grill/pan/skillet until hot.
Season beef with salt and pepper; mix. Flatten into 4 patties that are about 1/2 inch larger than the buns. Make a thumbprint in the middle of the patties so they don't puff up when cooking.
Grill/cook burgers about 4 minutes on the first side. Flip burgers. Place the buns face down on the grill. Cook until you reach the correct temperature (140 degrees F for medium), usually about 2 to 4 minutes.
Add cheese to burgers about 1 minute before they are done.
Spread mayonnaise on the bottom bun; add the burger; spread peanut butter on top of the burger. It will get gooey after a few seconds.
Serve, topping each burger with 2 bacon slices.
