If you want to impress friends or family with an elegant, delicious dish, serve them this lobster salad. It's simple and quick to make and can be ready in about 10 minutes.
1 1/2 lb. cooked lobster meat, (about 3 1/2 c.) cut into 3/4 inch pieces*
1/3 c. mayonnaise
1 1/2 T. freshly squeezed lemon juice
1/4 c. celery, finely chopped, (from the tender inner stalks)
1 T. chives, thinly sliced, plus more for garnish
salt and pepper, to taste
Add the lobster meat, mayonnaise, lemon juice, celery, chives, salt and pepper to a bowl; carefully stir to combine.
Serve immediately, or chill for up to 4 hours.
Serve immediately or refrigerated up to 4 hours. Garnish with more chives, if desired.

*You can buy lobster meat at the seafood department, or buy whole lobsters to cook for this salad.
