Why eat a boring sandwich when you can easily transform it into a panini? This recipe makes a basic panini that can easily be adapted to your taste.
1 T. extra-light or extra-virgin olive oil
2 slices Italian or French bread
2 T. mayonnaise, divided
2 slices Cheddar cheese or favorite cheese
3 slices deli ham, prosciutto, salami, or turkey
1 slice firm, ripe tomato
1 thin slice onion
non-stick cooking spray
Drizzle olive oil on 1 side of each bread slice for the outside slices; spread 1 T. mayonnaise on the other side of each slice for the inside slices.
Place cheese, ham, tomato and onion on top of one of the bread slices with the mayonnaise side up; top with other bread slice, mayonnaise side down.
Heat a grill pan, cast iron or non-stick skillet over medium-high heat; spray lightly with cooking spray.
Place sandwich on the grill; weigh it down with a heavy pan. Cook until cheese is melted, 3 - 5 minutes per side.
1 serving.
* This could also be made into a veggie panini using veggies in place of meat.
** A George Forman type grill can be used to eliminate the need for flipping.
