These stuffed avocados make a great light meal or even an appetizer. They are easy to make, delicious and a healthy meal.
2 ripe avocados, halved and pitted
9 oz. chopped or shredded cooked chicken
5 oz. fresh mini-mozzarella balls
1 c. cherry or grape tomatoes, quartered
1/2 c. fresh basil leaves, chiffonade
salt and pepper, to taste
1 T. balsamic vinegar or balsamic glaze
Scoop out some of the avocados from the center areas to create bowl areas. Place scooped out avocado into a medium-size bowl; mash with a fork.
Add chicken, mozzarella, tomato and basil; season with salt and pepper; stir until well mixed.
Scoop mixture evenly divided into the "bowl" of each avocado. Drizzle with balsamic vinegar or a balsamic glaze.
Serve.
