Ingredients
- olive oil
- 5 breakfast sausage links, diced
- 5 deli ham slices, diced
- 2 small potatoes, washed, peeled and shredded
- 1 c. Cheddar cheese, shredded, divided
- 4 large eggs
- 1/2 t. cumin
- 1/2 t. paprika
- 1/2 t. onion powder
- 1 t. salt
- 1/2 t. black pepper
- chopped green onions, for garnish
Steps
- Preheat broiler.

Add sausage; cook until browned; remove from skillet; set aside.
- Drizzle skillet with more olive oil. Add potatoes; cook until browned; press potatoes flat. Season with cumin, paprika, onion powder, salt and pepper over potatoes. Top with half of the Cheddar cheese.
