Ingredients

olive oil
5 breakfast sausage links, diced
5 deli ham slices, diced
2 small potatoes, washed, peeled and shredded
1 c. Cheddar cheese, shredded, divided
4 large eggs
1/2 t. cumin
1/2 t. paprika
1/2 t. onion powder
1 t. salt
1/2 t. black pepper
chopped green onions, for garnish

Preheat broiler.

Place an oiled oven-proof skillet (cast iron is preferred) This breakfast is fast and easy to prepare, but most of all it's delicious. It's a hearty and satisfying breakfast that will hold you until the next meal. It's all made in just one skillet so clean up is a snap. over medium-low heat. Add sausage; cook until browned; remove from skillet; set aside.

Drizzle skillet with more olive oil. Add potatoes; cook until browned; press potatoes flat. Season with cumin, paprika, onion powder, salt and pepper over potatoes. Top with half of the Cheddar cheese.

Layer on the sausage, ham, and the remaining cheese. Crack each egg carefully on top, evenly distributed.

Place skillet under broiler for about 5 minutes or until cooked to desired doneness. Since oven temperatures can vary, keep a close eye on the eggs.

Serve garnished with chopped green onions.
