This is a simple, economical main or side dish that can be ready in about 15 minutes. It can be customized with freshly shaved or grated Parmesan cheese, fresh vegetables or meat, if you wish.
1 lb. spaghetti
2 T. salt
1/4 c. + 2 T. extra virgin olive oil
8 garlic cloves, minced
1/2 t. crushed red pepper flakes
2 t. lemon juice
3 T. finely chopped fresh parsley
Bring a large pot of water to a boil. Add the salt to the water; cook pasta according to package directions, about 8-12 minutes. Drain.
In a small saucepan, pour in 1/4 c. olive oil; heat over low heat for 1 minute. Add garlic and red pepper flakes; stir; cook 1 minute. Remove from heat.
Pour olive oil mixture over pasta. Add in 2 T. olive oil; pour in lemon juice; sprinkle on parsley. Toss until pasta is coated.
Serve immediately.
