If you love Parmesan chicken, you'll love this casserole. It's easy and delicious.
6 boneless, skinless chicken breasts, diced
1 c. mayonnaise or Greek yogurt
1 c. shredded Parmesan cheese, divided
1 t. seasoning salt
1/2 t. freshly ground black pepper
1 t. garlic powder
Preheat oven to 375 degrees. Grease a 9x13 inch baking dish.
In a small bowl, combine mayonnaise, 3/4 c. cheese, seasoning salt, pepper and garlic powder; set aside.
Place diced chicken into the prepared baking dish. Evenly spread mayonnaise mixture over the top of the chicken. Sprinkle remaining cheese on top of mayonnaise mixture.
Bake 30-35 minutes.
Serve over pasta, rice, or alone.
6 servings.
*Tip: Chicken might be a bit "soupy" from the liquid being released as it cooks, so you might want to use a slotted spoon to serve it.
