Serve this quick and easy meal on meatless Mondays as a main dish. It can also be a side dish, if desired.
2 T. olive oil
2 T. butter
1 whole medium onion, finely diced
4 cloves garlic, minced
dash of crushed red pepper flakes, optional
2 15-oz. cans tomato or marinara sauce
salt and pepper, to taste
dash of sugar, to taste
1 c. heavy cream
grated Parmesan or Romano cheese, to taste
fresh basil, chopped
1 1/2 lb. fettuccine or favorite pasta
Cook pasta in well salted boiling water according to package directions; drain, reserving 1 c. pasta water; set aside.
Heat butter and oil in a skillet over medium heat. Add onions and garlic and red pepper flakes, if using; saute 1-2 minutes. Pour in tomato sauce; season with salt, pepper and sugar, to taste. Stir; cook over low heat for 25 - 30 minutes, stirring occasionally.
Remove from heat; stir in cream; add cheese, to taste. Thin with a little reserved pasta water, if needed. Season to taste. Stir in pasta.
Serve immediately, garnished with chopped basil and a little more cheese, if desired.
