This New Orlean's style sandwich will be a big hit for your family or guests. It's delicious, full of flavor and easy to prepare. No cooking is involved. Save yourself a headache and make it in advance.
1/4 c. red wine vinegar
2 garlic cloves, minced
1 t. dried oregano
1/3 c. olive oil
10 large pitted green olives, chopped
1/3 c. pitted, chopped Kalamata olives
1/4 c. chopped roasted red bell peppers
salt, to taste
freshly ground black pepper, to taste
1 lb. round bread loaf (about 7 inches in diameter and 3 inches high)
4 oz. thinly sliced ham
4 oz. thinly sliced mortadella or good quality bologna
4 oz. thinly sliced salami
4 oz. sliced provolone cheese
1/2 red onion, thinly sliced
1 1/2 oz. arugula
Whisk vinegar, garlic and oregano in a large bowl; gradually stir in oil; stir in olives and peppers. Season with salt and pepper.
Cut off the top inch of the bread loaf; set top aside. Hollow out the bottom and top halves of the bread.
Spread some olive and pepper mixture over the bread bottom and the cut side of the bread top. Layer meats and cheeses in the bread bottom. Top with onions and arugula. Spread the remaining olive and pepper mixture on top of the sandwich. Carefully place on the bread top.
Serve immediately or wrap the sandwich tightly in plastic wrap and place in the refrigerator a day before serving.
When ready to serve, cut the sandwich into wedges.
6-8 servings.
