This Cuban dish is made with ground beef and is usually eaten over white rice. It's great for weeknights because it's quick and easy. You'll love the sweetness of the raisins against the olives and capers.
1 T. olive oil
1-2 cloves garlic, minced
1 small onion, chopped
1/2 green bell pepper, chopped
1 lb. lean ground beef
6 large pitted green olives, quartered
1/2 c. raisins
1 T. capers, rinsed
8 oz. can tomato sauce
2 Roma tomatoes, chopped
2 (1.41 oz.) packages Sazon seasoning (blend of coriander, cumin, achiote, garlic powder, oregano, salt and pepper)
1 T. ground cumin
1 t. sugar
salt, to taste
cooked white rice, for serving, if desired
Heat oil in a skillet over medium heat; cook and stir garlic, onion and bell pepper in the hot oil until softened, 5-7 minutes.
Crumble ground beef into the skillet; cook and stir until browned completely, 7-10 minutes. Stir in olives, raisins, capers, tomato sauce, tomatoes, Sazon seasoning, cumin, sugar and salt. Cover; reduce heat to low; cook until heated through, 5-10 minutes.
Serve over cooked white rice, if desired.
