This pasta is just as good or maybe even better than what is served in restaurants. It's easy, economical and so quick to make, it makes a great weeknight dinner.
12 oz. fettuccine pasta
reserved pasta cooking water
1/4 c. butter
3/4 c. freshly grated Parmesan cheese
1/2 c. heavy cream
2 T. parsley, freshly chopped, optional
Cook pasta in well salted water according to package directions, 8-13 minutes; drain, reserving 1/4 c. pasta cooking water.
While pasta is cooking grate the Parmesan cheese.
In a small saucepan, melt butter over medium heat; gradually stir in cheese, add the cream and stir until well blended. Add a little reserved pasta water if needed to think the sauce. Continue heating sauce, stirring constantly, just to the boiling point. Remove from heat.
Toss sauce and drained hot pasta together. Garnish with parsley, if using.
Serve.
