This chicken dish will be a hit with your family because of its wonderful flavor. It'll be a hit with you because it's simple, quick and requires just a few pantry ingredients.
4 boneless, skinless chicken breasts
2 lemons, freshly juiced (about 1/2 c.)
2 T. extra virgin olive oil
2 t. lemon pepper
1 t. dried basil
1 t. dried oregano
¼ t. salt
freshly chopped parsley and lemon slices, for garnish
Place chicken breasts in a gallon-size plastic zip bag. Pour in lemon juice, olive oil, lemon pepper, basil, oregano and salt. Shake a little to cover chicken.
Let marinate in refrigerator for 30 minutes or up to 8 hours.
Heat a heavy skillet over medium-high heat.
Remove breasts from the marinade; place directly into the hot skillet. Discard marinade.
Cook chicken 6 - 7 minutes per side, flipping halfway through. Cook until chicken reaches an internal temperature of 165 degrees.
Serve hot, garnished with freshly chopped parsley and lemon slices and your favorite cooked pasta.
