If you like Big Macs, you'll enjoy these little cheeseburger tots. The tots are formed into little cups that are filled with hamburger, cheese, dill pickle relish and topped with a special sauce. Serve them as an appetizer, a side or even as the main dish
Cheeseburger Tots:
48 tater tots, frozen
1 lb. ground beef
1/2 c. onion, finely diced
salt and pepper, to taste
2 T. mayonnaise
2 T. yellow mustard
2 T. ketchup
2 T. dill pickle relish
1 c. cheddar cheese, shredded
mini dill pickles, for garnish
Special Sauce:
1/2 c. mayonnaise
4 T. dill pickle relish
2 T. yellow mustard
1 t. white wine vinegar
1 t. paprika
1 t. onion powder
1 t. garlic powder
Preheat oven to 425 degrees. Grease a mini-muffin pan.
Brown ground beef in a skillet over medium-high heat; discard grease. Add onions and beef back into skillet; cook until onions are softened. Add mayonnaise, mustard, ketchup and pickle relish; stir. Season with salt and pepper.
Pace 3 tater tots in each cup of prepared muffin pan. Bake for 10 minutes.
Remove the muffin pan from the oven; press tater tots down and up sides in each cup to create a tater tot cup; fill tots with a bit of ground beef mixture; top with cheddar cheese.
Place pan back in the oven; bake 15 minutes.
Remove pan from the oven; cool for 5 minutes before removing tots from the muffin pan.
While tots are cooling, stir together all of the special sauce ingredients.
Serve with sauce drizzled over the tots and topped with dill pickle slices.
