This vegetarian dish is the perfect meal for pasta lovers. It's made with three different cheeses, jumbo shells and marinara sauce. It's a very comforting and satisfying dish.
24 jumbo pasta shells
cooking spray
3 c. marinara sauce, divided
15 oz. ricotta cheese
3 c. shredded mozzarella cheese, divided
2 t. Italian seasoning
1 egg, beaten
salt and pepper, to taste
1/2 c. grated Parmesan cheese
2 T. chopped parsley
Cook pasta to al dente in well salted boiling water according to package directions; drain.
Preheat oven to 375 degrees. Spray a 9x13 inch baking pan with cooking spray.
Spread 1 1/2 c. marinara sauce in the bottom of the baking pan.
Add the ricotta cheese, 1 1/2 c. mozzarella cheese, Italian seasoning, egg, salt, pepper and Parmesan cheese to a bowl; stir.
Fill each cooked shell with the ricotta mixture; place cheese side up in the baking dish. Spoon remaining marinara sauce over the shells; sprinkle the remaining cheese over the top.
Cover the dish with aluminum foil. Bake for 20 minutes. Uncover; bake for another 10 minutes or until cheese is melted and starting to brown.
Serve sprinkled with parsley.
