This delicious meatloaf is made from ground pork and stuffing mix with green bell pepper or onion and sour cream. It's moist, full of spicy and smoky flavor from the bacon and salsa topping.
2 lb. ground pork
6 oz. package stuffing mix for chicken
2 eggs, beaten
1 green pepper, very finely finely chopped or 1 small onion, very finely chopped
1/2 c. sour cream
1/2 c. favorite salsa, divided, optional
4 bacon slices
Preheat oven to 350 degrees.
Mix ground pork, stuffing mix, eggs, peppers or onions and sour cream in large bowl until well blended.
Shape mixture into a loaf in a 13x9 inch baking dish; top with the 1/4 c.salsa and bacon slices.
Bake 1 hour 15 minutes or until cooked through.
Remove from oven; cover. Let stand 10 minutes before slicing.
Serve with warmed remaining salsa.
