This one pan dinner is quick to make and is so good, the whole family will want to lick their plates clean. The chicken is moist and the potatoes are creamy.
1/2 c. butter, melted
1/4 c. honey
2 T. whole grain Dijon mustard
1/2 t. salt
1/2 t. dried oregano
4 boneless, skinless chicken breasts
10 small red potatoes, quartered
salt and pepper, to taste
Preheat oven to 375 degrees. Lightly grease a 9x13 inch baking dish.
In a small bowl, whisk butter, honey, mustard, salt and oregano together.
Put chicken in the baking dish; arrange chicken with the potatoes. Drizzle mustard mixture over everything.
Bake 40 minutes or until potatoes are tender and chicken reaches an internal temperature of 165 degrees.
Stir and season potatoes with salt and pepper before serving.
