You can enjoy a more economical beef stroganoff using ground beef. It's just as good as the classic recipe with a delicious, creamy sauce.
1 T. olive oil
1 lb. lean ground beef
1/2 medium onion, diced
1 lb. mushrooms, sliced
2 garlic cloves, minced
2 T. all-purpose flour
1 c. beef broth or beef stock
1 c. whipping cream
1/3 c. sour cream
1 T. Worcestershire sauce
1/2 t. salt, or to taste
1/2 t. black pepper, or to taste
cooked noodles, rice or potatoes, for serving
Preheat a heavy, deep pan over medium-high heat; add olive oil. Add ground beef; stir, breaking down beef into small pieces.; discard any excess grease. Add onions and garlic; saute until onion is translucent and golden brown. Add mushrooms; saute 5 minutes.
Add flour; stir until incorporated and there are no lumps.
Add beef broth, whipping cream, Worcestershire sauce, salt, and pepper; bring to a simmer. Turn heat to low; simmer for about 5 minutes. Remove from heat; add sour cream; stir; season to taste, if needed.
Serve over cooked noodles, rice or potatoes.
