Spaghetti Pizza

Description

This pizza has no crust, to speak of. Instead the "crust" is cooked spaghetti which is topped with the typical things like cheeses, pizza sauce, meat and seasonings. Make it vegetarian without any meat, if desired.

Ingredients

4 large eggs
1/2 c. freshly grated Parmesan cheese
1 t. garlic powder
1 t. dried oregano
1/2 - 1 t. crushed red pepper flakes, optional
2 1/4 c. pizza sauce, divided
Kosher salt
freshly ground black pepper
1 1/2 c. freshly grated Mozzarella cheese
8 oz. spaghetti, cooked and cooled
1 T. olive oil
1 c. cooked, crumbled sausage or ground beef
5 thinly sliced any color bell pepper rings
1/4 c. sliced red onions
1/4 c. sliced black olives, drained
basil leaves or arugula, for optional garnish

Preheat oven to 400 degrees.

Whisk together eggs, Parmesan cheese, garlic powder, oregano, red pepper flakes and 1/4 c. pizza sauce in a large bowl; season with salt and pepper. Add 1/2 c. Mozzarella cheese and the spaghetti; toss well to coat pasta.

Heat olive oil in a 12 inch ovenproof, non-stick skillet over medium heat. When hot, add spaghetti mixture; spread evenly over the bottom of the skillet. Turn heat to low; cook just until the edges are beginning to set, about 3 minutes.

Pour remaining 2 c. pizza sauce evenly over the top, spreading evenly. Top with remaining 1 c. Mozzarella cheese, crumbled meat, bell pepper rings, onions and black olives.

Bake until spaghetti mixture is fully set and the cheese is bubbly, about 12 minutes.

Remove from oven; allow to cool for 5 minutes. Use a spatula around the edges and the bottom to help it slide out of the skillet.

Serve, garnished with basil or arugula, if desired.
